Huevos Rancheros meets Chilaquiles. Torn corn Tortillas, refried black beans, eggs, cheese, diced onion, coriander, and a squeeze of lime. But most importantly: really good, spicy salsa. It all comes together in one pan in less than ten minutes. A lid is essential for melting the cheese and cooking the eggs. This salsa is the best I’ve had since moving to the UK.
