Huevos Rancheros


  • 3 large eggs
  • 3 corn tortillas
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Our delicious Salsa Loca


  1. Prepare the Corn Tortillas:
    • In a skillet, heat a small amount of vegetable oil over medium heat.
    • Briefly fry each corn tortilla for about 15-20 seconds on each side, until they are slightly crisp but still pliable. Place them on paper towels to drain excess oil.
  1. Cook the Eggs:
    • In the same skillet, add a bit more oil if needed and heat over medium heat.
    • Crack the eggs into the skillet, leaving space between each egg.
    • Cook the eggs to your desired doneness. You can cook them sunny-side up or over-easy.
  1. Assemble the Dish:
    • Place a fried tortilla on each plate.
    • Top each tortilla with a portion of seasoned black beans.
  1. Add the Eggs:
    • Carefully place a cooked egg on top of the beans on each tortilla.
  1. Add the Toppings:
    • Scatter diced onions, crumbled queso fresco or feta cheese, and chopped cilantro over the eggs.
  1. Serve:
    • Garnish each plate with sliced avocado.
    • Season the dish with a pinch of salt and pepper.
  1. Salsa:
    • Serve the Huevos Rancheros with your preferred salsa on the side.
