Potato & Onion Tacos Dorados Recipe (Vegan)

Tacos:
Ingredients:
- 4 medium Potatoes, chopped small
- 1/2 brown Onion, finely chopped
- Salt & Pepper to taste
- 6 Corn Tortillas
- Vegetable Oil
Refried Beans
Ingredients:
- Vegetable Oil
- 1 Tbs of finely chopped Onion
- 2 medium Cloves of Garlic, finely chopped
- 1 can Kidney Beans
- Salt & Pepper to taste
Method:
Prepare Filling:

- Sauté onion and potato in vegetable oil.
- Cook until colour comes through, put aside.

Assemble Tacos:
- Soften tortillas on a preheated pan at medium heat.
- Spoon a line of filling onto your tortilla and roll tightly, one at the time.
- Another option is to use toothpicks to hold the tacos closed to fry. You can choose this if you prefer.

Fry Tacos:
- Place rolled tacos in the hot oil with tongs and hold for 40 seconds until the tortilla starts to crisp and let it go. Then turn them round only once when they are golden brown and crispy. Repeat on the other side.

Serve:
- Remove toothpicks.
- Serve with lettuce, with a great portion of La Salsa Loca, vegan sour cream, avocado slices, and refried beans for the final touch.
5. Prepare Refried Beans
- Heat a frying pan over medium heat.
- Sauté onions until golden, add garlic, and repeat the process.
- Empty an entire can of beans including the brine.
- Simmer briefly then blend the contents for 1-2 minutes, ensuring some texture remains.
- Return the mixture to the pan and simmer for 5 minutes. Season to taste and enjoy.
